Healthy summer refreshers

Faridabad-based Priya Gupta, founder of the popular YouTube channel ‘Recipes Tried and True’, shares nutrient-rich snack and refreshing drink recipes for the summer Wood apple juice/ Bel ka Sharbat (1 serving) INGREDIENTS • 1 wood apple (medium-sized) • 2 tbsp sugar • Black salt to taste • Lemon juice to taste PREPARATION GUIDE • Hit the wood apple on all sides with a rolling pin (belan) until the outer hard shell cracks. • Open the hard shell and scoop out the light brown colored pulp with a spoon. • Place scooped soft pulp in a bowl and add one cup cold water. Soak pulp for 20 minutes. • Mash pulp well. • Use a strainer to strain mashed mixture in parts. Stir with a spoon to ensure mixture is strained well. • While straining, add water also in parts. Overall, add about ½ to ¾ cup water, while straining. • Add some sugar, black salt, lemon drops and ice to strained pulp. Mix well. • Serve cold. Health benefits Wood apple juice is rich in vitamins A and C which boost immunity and skin health. Its high fiber content aids digestion and prevents constipation. Additionally, wood apple is known for its detoxifying properties and promotes liver health. Semolina sandwich (2 servings) INGREDIENTS • 1 cup semolina • 1 cup curd/yogurt • 7 cucumber slices • 7 tomato slices • 5 onion slices • 1 tsp chaat masala • 1 tsp ketchup • 2 tbsp green chutney • 2 tbsp oil • ½ tsp Eno fruit salt PREPARATION GUIDE • Mix semolina and curd in a bowl. Blend well by adding some water. Add ½ teaspoon of salt and mix well. • Set aside this batter for 15 minutes. • Now add ½ teaspoon of Eno fruit salt and some water to raise it. • Take a big pot; place an idli mould stand in it. Add some water and let it boil. • Pour batter in the idli moulds. Steam cook on high flame for 10 minutes. • Cool and demould using a knife. • Divide cooked idlis into two equal halves and assemble into a sandwich. • Add ketchup, tomato, onion, cucumber, chaat masala and green chutney. Prepare all sandwiches likewise. • Place and cook them in a sandwich maker. • Serve hot. Health benefits Semolina (rava) is rich in protein, dietary fibre, and Vitamin B, which aids energy production and metabolism. Cucumber, tomato, and onion provide essential vitamins, minerals, and antioxidants, promoting good digestion and body immunity. Curd supports gut health due to its probiotic properties. Tender coconut ice cream (2 servings) INGREDIENTS • 1 cup tender coconut meat • ¼ cup coconut water • ¼ cup milk with cream • ½ cup milk powder • ¼ cup sugar Preparation guide • Mix 1 cup of chopped tender coconut meat, coconut water, milk, cream of milk or malai, milk powder, and sugar. • Blend into a semi thick smooth paste. • Pour mix into a freezer safe container.
