115 gm wholemeal spaghetti
Juice of one lemon
1 avocado, peeled and chopped
2 chopped ripe tomatoes
½ pack fresh chopped coriander
1 finely chopped red onion
1 red chilli, finely chopped and deseeded (optional)
Cook the pasta according to packet instructions. Meanwhile, pour the lime juice in a bowl with the avocado, tomatoes, coriander, onion and chilli, and mix well.
Drain the pasta, toss into the bowl and mix well.
Serve while warm, or serve cold after refrigeration.
Avocado is rich in potassium, heart-healthy monounsaturated fatty acids and fibre.
