Apple Fritters

Ingredients

  • ½ cup plus 2 tbsp sugar
  • 1 ½ tsp ground cinnamon
  • 4 cups vegetable oil
  • 1 cup plain oats
  • ½ cup rice flour
  • 2 tbsp cornstarch
  • 1 tsp baking powder
  • ¾ tsp salt
  • 1 large egg
  • ½ cup (or more) soda
  • 2 large crisp apples, peeled, cored and sliced into thin rings

Preparation guide

  • Whisk ½ cup sugar and 1 tsp cinnamon in a shallow bowl; set aside.
  • Pour oil (3″ high) in a pot. Heat over medium-high heat.
  • Meanwhile, grind oats to a coarse powder. Transfer to a large bowl and add the rice flour, cornstarch, baking powder, salt, and remaining 2 tbsp sugar and ½ tsp cinnamon.
  • Whisk in the egg and ½ cup soda, adding more soda by the tablespoonful until you reach the consistency of pancake batter.
  • Dip apple rings in the batter and fry, turning occasionally, until golden brown and crisp. This will take about four minutes.
  • Transfer fritters to a paper towel-lined plate; drain and then toss in cinnamon sugar.

Health benefit: Apples promote good gut bacteria.
